Turkey Ham Tortilla Recipe

Ingredients:

4 8-inch whole wheat tortillas
4 heaping Tbsp light, herbed soft spreadable cheese
8 1-oz. slices TURKEY HAM
4 chopped green onions
1 large red pepper, cut into 8 julienne strips
1 large yellow pepper, cut into 8 julienne strips
1 cucumber, peeled, seeded and cut into julienne strips
1 Roma tomato, seeded and cut into julienne strips
8 Tbsp alfalfa sprouts

Servings: 4

Instructions:
1. Spread each tortilla with 1 heaping Tbsp herbed cheese and top with 2 slices ham. 2. Scatter 1/4th of onion over each tortilla. 3. Arrange 2 strips each of yellow and red pepper, cucumber and 1/4 of tomato strips down center of tortilla and sprinkle with 2 Tbsp alfalfa sprouts. 4. Fold in top and bottom portions of tortilla. Roll up from side to completely enclose filling. Cooking Tip: Fat-free cream cheese with vegetables may be substituted for light cheese spread.

Two Mushroom Tangerine Saute Recipe

Ingredients:

1/3 cup low-sodium chicken broth
1 cup sliced onion
2 cloves garlic, minced
- grated peel of 1 tangerine (2 tsp)
2 cups sliced fresh or reconstituted Oriental mushrooms such as shiitake, woodear, or enoki, stems removed
2 cups sliced fresh brown or white mushrooms
1 tsp crushed dried basil
1/4 tsp salt
1/4 tsp pepper
2 tangerines, peeled, segmented

Nutritional analysis per serving: calories: 54 g. fiber: 2 mg. sodium: 142 % calories from fat: 9

Instructions:
In large skillet heat 3 Tbsp of broth over medium-high heat. Saute onions, garlic, and tangerine peel for 3 minutes. Stir in Oriental mushrooms and additional broth as necessary; cook 2 minutes more. Add brown mushrooms, more broth if needed, basil, salt and pepper; cook 2 minutes. Stir in tangerine segments; cook 1 minute more. Drain and serve immediately.
